One Day Symposium on Computational Gastronomy: The Emerging Data Science of Food, Flavors, Nutrition & Health #GastroSym2022

Cooking forms the core of our cultural identity other than being the basis of nutrition and health. The increasing availability of culinary data and the advent of computational methods for their scrutiny are dramatically changing the artistic outlook towards gastronomy. The application of data-driven strategies for investigating gastronomic data has opened up exciting avenues giving rise to an all-new field of 'Computational Gastronomy'. This emerging interdisciplinary science asks questions of culinary origin to seek their answers via the compilation of culinary data and their analysis using methods of statistics, computer science, and artificial intelligence. These endeavors have the potential to transform the food landscape by effectively leveraging data-driven food innovations for better health, nutrition, and a sustainable future.
The 'Complex Systems Laboratory' at IIIT-Delhi (Prof. Ganesh Bagler) has been on the forefront of this emerging data science and has contributed to its foundation via pioneering studies in food pairing, culinary fingerprints, and health impacts of food, other than creating structured data repositories of recipes from across the world (RecipeDB), flavor molecules (FlavorDB), food-disease associations (DietRx, SpiceRx) and applications for novel recipes generation (Ratatouille).
The 'Symposium on Computational Gastronomy' is aimed at providing an exposition of this emerging interdisciplinary science involving data collection and curation, data analytics, machine learning, natural language processing, and pattern mining. 'Computational Gastronomy' has the potential to transform the landscape of food and can be effectively leveraged for better health and nutrition through an array of culinary applications (recipe design, food-beverage pairing, novel recipe generation, disease-specific culinary recommendation, dietary interventions, flavor combinations, taste prediction, etc.) apart from providing valuable insights into the principles of culinary sciences. Such advances are expected to set new trends in various allied sectors including food, health, hospitality, and tourism.
